Karaefe dried peppers are whole, cored red peppers dried for stuffing – just like in classic dolma. Drying gives them a concentrated, sweet pepper flavour, and after a short soak they turn soft and easy to fill. A handy store-cupboard staple that makes a whole pot of stuffed peppers.

How to enjoy it:

Preparation: Soak the peppers in hot water for a few minutes until softened.
Dolma: Stuff with spiced rice, bulgur or minced meat and pack tightly into a pan.
Cooking: Cover with tomato broth and simmer gently until the filling is cooked.
Serving: Serve warm with yoghurt, ideally with garlic and mint.

Ingredients: whole dried peppers.

Store in a cool, dry place. Once opened, keep tightly closed.
