Pawa, or Poha, is rice that has been pre-boiled and then rolled, flattened and dried to become rice flakes. The rice flakes absorb liquid when used in cooking and then also absorb flavors very well. They are widely used in Asian cooking, especially popular in the Indian subcontinent. There they are normally used to prepare snacks or light fast food.
Avori rice: Specially processed and nutritious round grainy rice with large, round and yellow-white grains that become sticky when cooked. Avori rice is imported from Italy and goes well with, among other things, risotto.
Basmati rice: Long narrow grains with a slightly nutty taste and aroma. It comes in a brown and a white variant. Basmati rice is a perfect matrix that does not stick when cooked and is often used for oriental dishes.
Long grain rice: Polished rice with long, white and slightly shiny rice grains. It is a fairly neutral matrix that is great to have in salads as it does not stick. If long-grain rice has been specially treated, the grains become yellowish in color and then it says "parboiled" on the packaging.
Round grain rice: The round grain rice is polished with small round grains. Round grain rice is sticky when cooked and is therefore best used for porridge, pudding and sushi.
