Pekmez is a molasses-like syrup obtained after condensing juice from fruit must, especially grape must by boiling it with coagulant. Although pekmez means "molasses" in Turkish, it is most often associated with grape syrup. In Turkey, pekmez is used as a syrup or mixed with tahini for breakfast. In Azerbaijan, pekmez is mixed with natural yogurt as a kind of cooling snack during the summer.
