Pekmez grape syrup

Pekmez is a molasses-like syrup obtained after condensing juice from fruit must, especially grape must by boiling it with coagulant. Although pekmez means "molasses" in Turkish, it is most often associated with grape syrup. In Turkey, pekmez is used as a syrup or mixed with tahini for breakfast. In Azerbaijan, pekmez is mixed with natural yogurt as a kind of cooling snack during the summer.

Pekmez comes in different flavors and the most common fruits used are grapes, mulberries and pomegranates. Another kind of pekmez, made from carob and which is better known as carob syrup, is also very popular in the countries around the Mediterranean.
