Sun-dried courgette has a concentrated sweetness and aroma and a chewy texture that soaks up sauce and spices quite differently from fresh courgette. A classic in the Middle East, where it is stuffed for dolma or used to give stews an earthy depth.

How to enjoy it:

  • Soaking: Soak in warm water for approx. 30–60 min or bring to a quick boil until soft.
  • Dolma: Stuff with rice, spices and mince.
  • Stew: Cut into a hearty tomato-based stew.
  • Soup: Adds an earthy, full flavour.

Store dry at room temperature.
