Biola-cheese Ezine cheese (Ezine peyniri), made from high-quality cow's milk, represents the best of Turkish cheese-making tradition. It is produced in the Ezine and Bayramiç districts of Çanakkale, known as the cheese capital of Turkey. Here, the craft has been passed down for generations, with cheesemakers trained through the master-apprentice tradition.
Biola-cheese ensures the highest quality by using milk from naturally grazing cows in open meadows. The milk is transported in refrigerated vehicles, filtered at 4000 rpm and pasteurized before being fermented with natural yeast. No other additives are used in the process. The cheese is aged for at least 6-9 months in cold storage to achieve its rich, authentic flavor.
Made with Şirden Mayası (natural rennet), which gives the cheese its unique texture and rich flavor.
