Kolot cheese
Kolot cheese, also known as Kolot peyniri, is a traditional cheese from the Black Sea region, particularly popular in provinces such as Trabzon and Rize. This semi-hard cheese is made from fresh cow's milk and is characterized by its natural butteriness, mild saltiness and an elastic, meltable texture.
Kolot cheese is often used in the classic dish muhlama (kuymak), where it is melted together with corn flour and butter to create an irresistibly stringy and creamy cheese mixture. It is also an excellent choice for grilled sandwiches, pastries or as a breakfast cheese.
Made using traditional methods without unnecessary additives, the cheese is a tribute to the rustic food culture of Turkey's mountainous regions.
