Patak's best-known pickle: 61% lime matured in rapeseed oil with paprika, chilli, mustard and fenugreek. The flavour is intensely tangy, salty and properly hot – a classic achar that wakes up every plate. A little goes a long way.

How to enjoy it:

With curry and dal: Serve a teaspoon on the side for sourness and heat.
With rice: The obvious accompaniment to biryani and pulao.
With bread: Spread thinly on warm chapati or naan.
Marinade: Mix with yoghurt for chicken or lamb.

Ingredients: lime (61 %), rapeseed oil, salt, spices (6 %), paprika, chilli (2 %), acidity regulator: acetic acid, mustard seed, fenugreek, mustard powder.

Store in a cool, dry place. Once opened, keep refrigerated.
