Mastic is an aromatic resin from the mastic tree with a unique flavour reminiscent of wood and pine. The spice is traditionally used in festive breads, brioches, cakes and ice cream, and goes surprisingly well with chocolate too. The crystals are best ground with a little sugar before being mixed into dough or batter.
