The base here is a combination of urid flour and rice flour – giving a thinner, whiter and extremely crispy papadum with a more neutral flavour. Its origins lie in Tamil Nadu and Karnataka, where papadum is traditionally served as part of a thali meal or used as the base for chaat dishes.
