Recipe: Perfectly Crispy Falafel in Pitta with Creamy Tahini Sauce

This recipe gives you a complete, memorable meal. We serve our falafel the classic way, in warm pitta bread with crunchy vegetables and a homemade tahini sauce that ties all the flavours together.

Ingredients (serves about 4)

  • 1 packet Falafel Mix from Etnomat
  • About 250 ml water
  • Neutral oil for frying or oven baking (e.g. rapeseed or sunflower oil)
  • 4–6 pitta breads
  • Vegetables of your choice: iceberg lettuce, diced tomato, sliced cucumber, finely chopped parsley, thinly sliced red onion

For the tahini sauce:

Method: Step by Step

  • Step 1: Make the falafel mixture. Combine the contents of the falafel mix packet with about 250 ml cold water in a bowl. Stir well until smooth. Cover and leave to swell in the fridge for at least 30 minutes.
  • Step 2: Make the tahini sauce. While the mixture rests, whisk the tahini, lemon juice, crushed garlic and salt together in another bowl. Add the water a little at a time, whisking constantly, until you have a smooth, creamy sauce of the consistency you like. Taste and add more salt or lemon if needed.
  • Step 3: Shape the falafel. Take the mixture out of the fridge. Wet your hands slightly and shape it into small, even balls or flat patties, about 3–4 cm across.
  • Step 4: Cook the falafel. You can choose between two methods:
    • Deep-frying (for extra crunch): Heat plenty of oil (about 3–4 cm deep) in a saucepan or deep frying pan to around 170–180°C. Carefully fry a few falafel at a time for 3–4 minutes, or until golden brown and cooked through. Drain on kitchen paper.
    • Oven baking (uses less oil): Heat the oven to 200°C. Place the falafel on a baking tray lined with baking paper, brush lightly with oil and bake for 20–25 minutes, turning halfway for an even colour.
  • Step 5: Serve. Warm the pitta breads gently. Fill them with crunchy vegetables and 3–4 hot falafel, then drizzle generously with your homemade tahini sauce. Serve at once and enjoy!
