Bombay Biryani: Your Shortcut to the Flavours of Mumbai

30/05, 2026 –

Picture a feast where every mouthful is a little adventure. Fragrant, fluffy basmati rice layered with tender meat, spiced potatoes and a whole chorus of aromatic spices. That is the magic of Bombay Biryani – one of the best-loved rice dishes of the Indian subcontinent. It is famous for its balance of heat, sweetness and tang, often with a lovely note of dried plums. Making an authentic Bombay Biryani from scratch can feel daunting, given the long list of spices involved. But there is a shortcut, and it is called Shan Bombay Biryani Mix.

This expertly blended mix from Shan puts all those complex, carefully balanced flavours into a single packet. It helps you recreate the rich, deeply satisfying taste that has made Bombay Biryani such a legendary dish. Let us walk you through it, step by step, in your own kitchen.

Ingredients for Bombay Biryani (serves about 4–6)

  • 750 g chicken, lamb or beef, cut into chunks
  • 500 g good-quality long-grain basmati rice
  • 2 large potatoes, peeled and diced
  • 3 large brown onions, thinly sliced
  • 2 large tomatoes, finely chopped
  • 100 ml plain yoghurt
  • 2 tbsp ginger and garlic paste
  • 1 packet Shan Bombay Biryani Mix 60g
  • 100 ml cooking oil or ghee
  • A pinch of saffron threads (optional), soaked in 2 tbsp warm milk
  • Fresh mint and coriander leaves to garnish
  • Crispy fried onions to garnish (optional)
  • Water for cooking

Method: step by step

  1. Prepare: Rinse the rice thoroughly and leave it to soak in cold water for at least 30 minutes – this keeps the grains long and fluffy. In a large bowl, mix the meat with the yoghurt, the ginger and garlic paste and the whole packet of Shan Bombay Biryani Mix. Leave to marinate for at least 30 minutes, longer if you can, for a deeper flavour.
  2. Fry the onions and potatoes: Heat the oil or ghee in a large, heavy-based pan. Fry the sliced onions over a medium-high heat until golden and crisp. Lift out half and set aside for garnishing. Add the diced potatoes to the pan and fry for a few minutes until lightly coloured.
  3. Cook the meat masala: Add the marinated meat and brown it on all sides. Stir in the chopped tomatoes, cover and simmer over a medium-low heat for about 15–20 minutes (longer for lamb or beef) until the meat is tender and the oil starts to separate from the sauce.
  4. Cook the rice: Bring a large pan of well-salted water to the boil. Drain the soaked rice and add it to the boiling water. Cook for 5–7 minutes, until about 70% done – it should still have a firm centre. Drain straight away.
  5. Layer your biryani: Now for the magic bit! Spread half the par-cooked rice over the meat masala in the pan. Top with half the reserved fried onions, plus fresh mint and coriander. Then add the rest of the rice as a final layer.
  6. Steam ("dum"): Drizzle over the saffron milk, if using. Cover with a tight-fitting lid – you can seal it with a strip of dough or foil to trap all the steam. Turn the heat down as low as it will go and let the biryani steam for 15–20 minutes. This lets the flavours meld while the rice finishes cooking in the steam from the masala.
  7. To serve: Turn off the heat and let the biryani rest for 10 minutes before lifting the lid. Using a fork or a wide spoon, gently mix the rice and masala in from the edges for a lovely mix of white and coloured grains. Garnish with the remaining fried onions, mint and coriander. Serve straight away with raita and a fresh salad.
