Our small green lentils are a pure Greek variety called Dimitra which has adapted perfectly to the region's climate and soil conditions. They are of small size and light brown color. Their full flavor and rich "Mediterranean" aroma reflect the purity of the environment they are grown in. They are soft and easy to prepare.
Green lentils are full of protein and dietary fiber and go with most things. In salads, in soups, in stews, in stir-fries or in pies. They are also good for sprouting and then become full of vitamin C.
