Adjika Chicken Skewers: Light the Grill with Caucasus Fire

18/05, 2026 –

Forget tired barbecue rubs and run-of-the-mill marinades. It's time to head for the majestic Caucasus mountains with a flavour that's as wild and beautiful as the landscape it comes from. We're talking about Adjika – a fiery, deeply aromatic and utterly irresistible chilli paste that sits at the heart of Abkhazian and Georgian cooking. Our hot Abkhazian Adjika isn't just about heat; it's a complex blend of chilli, garlic, herbs and spices that turns the simplest ingredient into a feast. In this recipe it takes centre stage, marinating juicy chicken skewers that will have your taste buds singing.

Ingredients

  • About 600 g boneless chicken thighs, cut into cubes (approx. 3 x 3 cm)
  • 2–3 tbsp Adjika Abkhazian – hot (adjust to taste)
  • 200 ml Turkish or Greek yoghurt
  • 1 tbsp freshly squeezed lemon juice
  • 2 garlic cloves, finely grated
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp olive oil
  • Skewers, if using (soak wooden skewers for at least 30 minutes)

To serve:

  • Warm pitta bread or lavash
  • A fresh salad of tomato, cucumber and red onion
  • A dollop of cooling yoghurt sauce
  • Freshly chopped coriander or parsley

Method

1. Prep the chicken: Cut the chicken into even cubes and put them in a large bowl.

2. Mix the marinade: In a separate bowl, whisk together the Adjika, yoghurt, lemon juice, grated garlic, ground coriander, salt, pepper and olive oil to make a smooth, creamy marinade. Have a sniff – those deep, spicy aromas already promise something special!

3. Marinate: Pour the marinade over the chicken and mix thoroughly so every piece is fully coated. Cover the bowl with cling film and put it in the fridge. Leave to marinate for at least 2 hours, or overnight for the deepest flavour.

4. Thread the skewers: Thread the marinated chicken onto your skewers. Don't pack them too tightly, so they cook more evenly.

5. Grill: Set up the barbecue for direct, medium-high heat. Grill the skewers for about 10–15 minutes, turning regularly, until the chicken is beautifully charred and cooked through. The juices should run clear when you pierce a piece.

6. Serve: Let the skewers rest for a couple of minutes, then serve them piping hot with good bread, a crisp salad and a dollop of cooling yoghurt. Finish with fresh herbs. Enjoy the bold, unforgettable flavours of the Caucasus!
