Creamy French Mustard Chicken – A Bistro Classic at Home

18/05, 2026 –

Picture a charming little Paris bistro with this classic, irresistibly creamy chicken dish. The secret behind its deep, rustic flavour and luscious texture is none other than French wholegrain mustard. Unlike smooth Dijon, the wholegrain variety, with its whole mustard seeds, has a milder heat and a delightful “pop” in the mouth. It’s an easy dish to make but tastes luxurious – perfect for a weeknight when you fancy a treat, or for a weekend dinner party.

Ingredients

  • 4–6 boneless chicken thighs (about 600 g)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 shallots, finely chopped
  • 2 garlic cloves, finely chopped
  • 100 ml dry white wine (e.g. Sauvignon Blanc)
  • 200 ml chicken stock
  • 200 ml crème fraîche or double cream
  • 3 tbsp French wholegrain mustard
  • 1 tbsp fresh tarragon or parsley, chopped
  • Salt and freshly ground black pepper

Method

  1. Start by patting the chicken thighs dry with kitchen paper. Season generously on both sides with salt and pepper.
  2. Heat the olive oil and butter in a large frying pan or casserole over a medium heat. When the butter stops foaming, add the chicken and brown for about 3–4 minutes per side until nicely golden. Lift out the chicken and set aside.
  3. Lower the heat slightly and add the chopped shallots to the same pan. Fry for a couple of minutes until soft and translucent. Add the garlic and cook for another minute until fragrant.
  4. Pour in the white wine to deglaze the pan, using a wooden spoon to scrape up all the tasty bits stuck to the bottom. Let the wine bubble and reduce by about half.
  5. Add the chicken stock, crème fraîche and the star ingredient – the wholegrain mustard. Whisk into a smooth sauce and bring to a simmer.
  6. Return the browned chicken to the sauce. Lower the heat, cover and let it simmer gently for 15–20 minutes, or until the chicken is cooked through and tender.
  7. Season the sauce with salt and pepper. Stir in the fresh chopped tarragon or parsley just before serving.
  8. Serve your creamy French mustard chicken piping hot, ideally with mashed potatoes, rice or a good sourdough loaf to mop up all that wonderful sauce. Bon appétit!
