21/05, 2026 –

Imagine the irresistible aromas drifting from a busy street stall in Bangkok – sweet, spiced and smoky notes from freshly roasted meat drawing you closer. One of the most iconic dishes you will find there is "Moo Daeng": juicy roast pork with a distinctive deep-red colour and an unforgettable flavour. Sound complicated? Not any more! With Lobo Seasoning Mix for Roasted Red Pork you can easily recreate this Thai classic in your own kitchen. This seasoning blend is made in Thailand and gives your pork that flavourful, beautifully glossy red crust that makes the dish so special.

Ingredients for Thai red pork (serves about 4)

  • 1 kg boneless pork loin in one piece
  • 1 sachet (100 g) Lobo Seasoning Mix for Roasted Red Pork
  • 120 ml water
  • Jasmine rice, to serve
  • Cucumber and fresh coriander to garnish
  • Pak choi, lightly boiled or steamed (optional)

Method – step by step

  1. Make the marinade: Tip the contents of one sachet of Lobo seasoning mix into a bowl. Add the water and stir well until all the sugar and salt has dissolved and you have a smooth red marinade.
  2. Marinate the meat: Place the pork in a large bag or dish. Pour over the marinade, making sure the whole joint is covered, and rub it in well. For the best result, marinate in the fridge for at least 3 hours, ideally overnight. The longer it marinates, the deeper the flavour and colour.
  3. Get the oven ready: Preheat the oven to 200°C. Place the pork on an oven rack with a tray underneath to catch the drips. Keep the leftover marinade from the bag or dish.
  4. Roast to perfection: Roast the pork for about 20 minutes. Take it out and brush generously with the reserved marinade. Return to the oven for another 20–25 minutes, until cooked through with a beautiful caramelised surface. The internal temperature should be around 70–72°C.
  5. Rest and slice: Remove the pork from the oven and let it rest for 10–15 minutes before carving – this keeps it juicier. Then cut it into thin, neat slices.
  6. Serve: Serve the juicy slices of red pork with freshly cooked jasmine rice, crisp cucumber, fresh coriander and a little steamed pak choi if you like. A memorable Thai feast is ready to enjoy!
