Famous dried soya protein is a handy store-cupboard staple that quickly rehydrates and takes on the flavour of stock, marinade and spices. Use it like mince in bolognese, tacos and stews, or shape it into burgers.

How to enjoy it:

Preparation: Rehydrate in hot stock or water and squeeze out excess liquid before frying.
Bolognese: Fry with onion, garlic and tomato for a vegetarian bolognese.
Tacos: Season with taco spice and serve in tortillas with vegetables and salsa.
Burgers: Mix with breadcrumbs, spices and onion and fry into flavourful patties.
