TRS kala namak, or black salt, has a pinkish-grey colour and a distinctive sulphurous aroma and flavour reminiscent of egg. It is a must in chaat masala, raita and fresh fruit salads – and the secret behind the eggy taste of scrambled tofu.

How to enjoy it:

  • Egg-free scramble: Sprinkle over tofu or a chickpea omelette.
  • Chaat and snacks: A classic seasoning for fruit chaat, samosas and popcorn.
  • Raita and drinks: A pinch in raita, lassi and lemonade.
  • Tip: Use as a finishing salt – the flavour is strong.
