Dreaming of the bustling streets of Delhi, full of the scent of spices and sizzling snacks? With a sprinkle of the right seasoning you can recreate that magic in your own kitchen. The key is Chaat Masala, an iconic Indian spice blend that is a symphony of flavours – tangy, salty, spicy and just a little sweet. Shan Chaat Masala balances all of this to perfection. With ingredients such as black salt (kala namak), dried green mango (amchur), cumin and hing (asafoetida), it brings a complex flavour that is impossible to resist. Let’s turn the humble potato into something unforgettable with Aloo Chaat!

What is Aloo Chaat?

Aloo Chaat is a much-loved Indian street food dish whose name literally means “potato snack”. It is made of crispy fried or roasted potato cubes tossed with spices, chutney and fresh ingredients such as onion and coriander. Textures and flavours come together in perfect harmony – and the crowning touch is always a generous sprinkle of Chaat Masala.

Recipe: crispy Aloo Chaat, Indian street style

This recipe is easy to follow and gives fantastic results. Perfect as an exciting nibble, a starter or part of a bigger Indian spread.

Ingredients

  • 500 g waxy potatoes, peeled and cut into 2 cm cubes
  • Oil for frying or roasting
  • 1 red onion, finely chopped
  • 1 green chilli, finely chopped (optional, adjust to taste)
  • A handful of fresh coriander, roughly chopped
  • 2 tbsp tamarind chutney
  • 2 tbsp mint and coriander chutney (green chutney)
  • Juice of 1/2 lime
  • 1–2 tsp Shan Chaat Masala (or more, to taste!)
  • Optional: sev (crispy chickpea noodles) and pomegranate seeds to garnish

Method

  • Step 1: Prepare the potatoes
  • Boil the potato cubes in salted water for about 8–10 minutes, until almost tender but still holding their shape. Drain and leave them to steam dry completely. This is crucial for getting them really crispy.
  • Step 2: Fry or roast
  • Heat oil in a pan or deep-fat fryer to about 180°C. Fry the potato cubes in batches until golden and crisp, then drain on kitchen paper. Alternatively, toss the potatoes in a couple of tablespoons of oil and roast in the oven at 225°C for 20–25 minutes, until golden and crispy.
  • Step 3: Assemble your Aloo Chaat
  • Tip the hot, crispy potatoes into a large bowl. Add the chopped red onion, green chilli and fresh coriander.
  • Step 4: Dress it
  • Drizzle over the tamarind chutney, green chutney and freshly squeezed lime juice. Toss gently so everything is coated.
  • Step 5: The magic touch
  • Now for the most important step! Sprinkle Shan Chaat Masala generously over the potatoes. Start with a teaspoon and taste. This blend is potent and gives that authentic, tingly flavour on the tongue.
  • Step 6: Serve straight away
  • Garnish with crispy sev and jewel-like pomegranate seeds if you like. Serve immediately while the potatoes are still hot and crisp. Enjoy the flavour explosion!
