Dried barberries, zereshk, are small red berries with an intense, fresh tartness. They are the key ingredient in zereshk polo – saffron rice with chicken, where the berries are fried in butter with a little sugar and scattered over the rice.

How to enjoy it:

Zereshk polo: Briefly fry the berries in butter with a little sugar and scatter over saffron rice.
Rice and pilaf: Adds fresh, red, tangy flecks to rice dishes.
Salads: A tangy contrast in salads with nuts and cheese.
Tip: Rinse and fry only briefly – the berries turn bitter if they burn.
