Grilled Corn with Tajín – A Mexican Flavour Explosion

19/05, 2026 –

Have you ever tasted that perfect balance of sour, salty and a hint of heat that makes your taste buds dance? Then you may already have met Tajín, Mexico's best-loved seasoning. Tajín is more than a seasoning – it is a shortcut to bright, authentic flavour. The iconic blend of chilli, dried lime and sea salt is magic on everything from fresh fruit such as mango and watermelon to anything off the grill. Today we are sharing a recipe that sums up Mexican street food: elotes, grilled corn on the cob that gets its irresistible flavour from Tajín.

It is incredibly easy to make, yet the result is spectacular. Perfect as a side at a barbecue, as a tasty snack, or whenever you want to serve something guaranteed to impress. Get ready to turn a humble corn cob into a real highlight!

What you will need

  • 4 fresh corn cobs, with husks on if possible
  • 100 ml good-quality mayonnaise
  • 100 ml crumbled Cotija cheese (feta or finely grated Parmesan work too)
  • 2–3 tbsp Tajín Clásico seasoning (or more, to taste!)
  • 1/2 pot fresh coriander, finely chopped
  • 1 lime, cut into wedges to serve
  • A little butter or oil for brushing (optional)

Method: step by step

  1. Prepare the barbecue for medium-high direct heat. If your corn still has its husks, pull them back and remove the silky threads. You can tie the husks together to use as a handle, or remove them completely.
  2. Brush the corn lightly with melted butter or a neutral oil and lay it directly on the grill.
  3. Grill the corn for about 10–15 minutes, turning regularly so it turns golden brown with a few lightly charred patches all over. It is ready when the kernels are tender.
  4. While the corn is grilling, prepare the topping. Crumble the cheese into a shallow dish and chop the coriander.
  5. When the corn is done, take it off the heat. Brush each cob generously with mayonnaise while still warm.
  6. Roll the mayo-coated cobs in the crumbled cheese so they are well covered.
  7. Now for the magic! Sprinkle plenty of Tajín Clásico over each cob. Don't hold back – this is where all that fantastic flavour comes from!
  8. Top with chopped coriander and serve straight away with a lime wedge to squeeze over just before the first bite.
